Jason McHenry felt the pop of the grease as his hand reached over the grill to grab his

spatula. After putting in several years at Riverside Burger, the grease didn’t bother him anymore. Several cooks had come and gone since he’d been there, and they all looked the same for the first few weeks.

The new kids were scared of the burns that a grill could inflict. And while it was true that the top of the grill would reach temperatures near 400 degrees, a healthy respect for the equipment and its cooking capabilities would prevent the majority of those burns.

Jason scooped up the last two patties of the evening and carried them over to the bottom half of a grilled bun.
