Canning and Preserving - Zucchini Relish

I'm not sure where my mother found her recipe for zucchini relish.  She had a large collection of cookbooks, so more than likely it came from one of them.  I can't remember her making zucchini relish until I was in my early teens.  We had a bumper crop of zucchini one year, so she was making all sorts of recipes with zucchini.  Zucchini relish was one of them and quickly became a favorite of the relish fans in our family. 

This year was the first year that we grew our own zucchini.  I knew right away what I was going to do with it.  We didn't get a bumper crop, but we got enough for a batch of relish!
