1 cup water
1 cup pumpkin, chopped
(or 1 cup frozen squash pieces)
1/4 cup red dried lentils
1/2 cup frozen mixed vegetables
a pinch of turmeric (optional)
Wash and rinse red lentils. Soak for 30 minutes.
Combine pumpkin or squash and lentils in a pan, add water and bring to a boil.
Reduce heat, simmer for 20 minutes.
Add frozen vegetables and simmer for another 5-10 minutes until vegetables are soft.
