3/4 cup shredded zucchini, squeezed dry
1/2 cup cheddar cheese
4 tablespoons coconut flour
pinch of cumin or Italian seasoning
Heat oven to 350°F and prepare a baking sheet with aluminum foil, lightly greased.
Mix everything together and make into mini patty cakes, about 1” flattened.
Place on baking sheet and bake for 13 minutes, until crispy on the sides.
Serve warm. This freezes very well too!
