Ingredients:
2 lb boneless skinless chicken thighs
14.5 oz can diced tomatoes
1 cucumber, diced
14 oz can coconut milk
3 cloves garlic, minced or 1 tablespoon prepared garlic
1 onion, diced
2 teaspoons garam marsala
1 teaspoon curry powder
1 teaspoon salt
1 teaspoon pepper (optional)
Instructions:
Add everything except for cucumber into the slow cooker.
Cook chicken in slow cooker on low for 6-8 hours or high for 3-4 hours.
