Turkey and Wild Rice Soup

Every year I try to come up with something new to do with Turkey leftovers, other than turkey sandwiches. One of my favorites is this deliciously simple soup, perfect for chilly December evenings!

This recipe calls for the addition of spinach and leeks, but celery or potatoes would be an equally tasty addition.

HOW TO MAKE SURE IT'S DIVINE:

1. Use unsalted butter and low sodium broth for the base, then add a pinch of salt to taste. I prefer to make my dishes as low-sodium as possible and let my guests salt the dish to their own preference, which prevents accidental over-salting.
