I posted my favorite Schnitzel recipe some time ago, and mentioned, I believe, that it traditionally goes with a side of Spätzle. So, since some of you may not have any idea what that is, Spätzle is a mix between a dumpling and a noodle. Some places serve them buttered or sprinkled with toasted bread crumbs, while others serve them with brown gravy. They're very versatile!

Spätzle has been around since before the 18th Century, and continues to be a favorite side dish for many European dishes.
