My mother used to tell me that she never had problems getting me to eat vegetables as a kid and it's true that I still enjoy them as a side to almost anything. Green beans, in particular, are one of my favorite sides.

This particular side dish is a favorite for the holidays, and it's so colorful as well. I know some people balk at anything that has to do with sweet potatoes, but honestly, as long as you cook them properly, they're quite nice!
